Hollis Wilder’s Sugar Free Recipe for Red Velvet Cupcakes

Hollis Wilder, three time winner of the Food Network’s Cupcake Wars reality series, is a Pyure Brands partner and advocate for stevia sweeteners. We partnered with Hollis when we learned that the Cupcake Wars fan favorite was a fan of our Bakeable Blend Stevia. This sweet partnership resulted in this guilt-free, sugar free recipe for Red Velvet Cupcakes with Cream Cheese Frosting.
- 2 1/2 cups flour
- 1 tablespoon cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups Pyure Bakeable Blend Stevia Sweetener
- 1 1/4 cup buttermilk
- 1 tablespoon vanilla
- 2 tablespoons red food dye
- 1 1/4 cup cooking oil
- 1/3 cup egg whites
- 1 teaspoon vinegar
- 2 eight-oz cream cheese
- 6 tablespoons salted butter
- 1 1/2 teaspoons pure vanilla extract
- 2 cups Pyure Bakeable Blend Stevia Sweetener
Preheat oven to 350˚F. Line cupcake tray with cupcake liners.
Sift flour, cocoa, baking soda, and salt into a medium bowl, then add the Pyure Bakeable Stevia Blend and mix together.
In a mixer, whisk together buttermilk, vanilla, food coloring, oil and eggs. Add in the flour mixture. Then add the vinegar.
Pour batter into cupcake liners and bake at 350˚F for about 20 minutes or until a toothpick comes out clean. Remove from oven and let cupcakes cool for 5 minutes, transfer onto a rack. Makes 24 cupcakes
Combine all ingredients and mix until smooth and fluffy. After cupcakes have cooled, spread on top of cupcakes. Makes enough to cover 12-24 cupcakes
